Eggs Benedict with hot buttered English muffins, crispy bacon and poached eggs, topped with hollandaise sauce 
Crepes with a compote of mixed berries and whipped cream, served with a fresh fruit platter 
Caribbean lobster omelette with feta cheese and asparagus

Grilled rack of lamb with provencal vegetables, olive tapenade and basil pesto

Fresh crab cakes with sweet chilli aioli and cucumber and dill salad

Rib-eye steaks with peppercorn sauce and grilled asparagus, served with dauphinoise potatoes 
Walnut crusted pork loin, cider fondant potatoes, buttered cabbage and beetroot glaze 
Mahi Mahi with an onion, capers and lemon sauce, served on a bed of wild rice with butternut squash and leeks 
Chicken breast stuffed with boursin, sundried tomatoes and basil, wrapped with streaky bacon in a white wine sauce and served with sweet potato mash 
Grilled salmon, marinated in a soy, ginger and honey sauce, served with double cooked new potatoes and roasted sweet cherry tomatoes

CAPTAIN TOMMY

Tommy’s been boating for 19 years, turning his passion into a professional career since 2010. Specializing in power, sail, and motorboats, he has spent eight years teaching his skills. Together with Emma, they’ve offered luxurious catamaran charters across the BVI, Bahamas, and St. Maarten since March 2022. From mixing delicious cocktails to his enthusiasm for watersports and extensive Caribbean knowledge, Tommy ensures a safe, comfortable, and memorable experience aboard. ⛵🍹

CHEF EMMA

Emma’s passion for the sea started early when she sailed her father’s yacht along England’s Southwest Coast. She worked in hospitality while studying Education and Art, later spending a gap year in the French Alps as a Ski Chalet Hostess. Her love for cooking nurtured through various courses, including a Yacht Chef program, led her to explore culinary cultures in Thailand and Bali.

Discovering the BVIs in 2013 while learning scuba diving, Emma fell in love with the islands and their community. Since 2014, she has been working on charter yachts, sharing her cooking, scuba diving, and snorkeling expertise. Emma is also learning to wing foil.
