Captain Paul Knox - Paul grew up in upstate New York and began yachting in Michigan in 1986 after serving 9 years in the U.S. Coast Guard. He has served as Mate and Captain on various yachts over the past 30+ years. Paul took a short break from the warm tropical waters of yachting in 1993 and served as Chief Mate aboard a Bering Sea commercial longliner in Alaska. Paul and his wife Lo-ami and son Pieter, travel annually to Kareehoek in South Africa to visit family.
Mate Jeff Krebs – Jeff grew up on the Great Lakes, from the age of two he has spent every available minute on the water. His Dad shared his passion for fishing with him, which grew into a love of everything water related. From the age of 12 Jeff knew he wanted his career to be on the water. He finished his Captains license simultaneously alongside his degree from Michigan State University. Jeff is a USCG licensed captain with a degree in fisheries and wildlife management. His passions include fishing, sailing, scuba diving and hiking. Jeff loves to share his passion for the ocean, and you can always count on him for fun and interesting facts about wildlife and ecology.
Stewardess Charli Fredette – Charli grew up in a resort town in Vermont skiing and horseback riding. From the start Charli worked in hospitality and housekeeping earning a solid background that transitioned exceptionally well into yachts. She has worked in the Bahamas, Caribbean, Mediterranean, New Zealand and Australia. Charli looks forward to making guests comfortable and feel at home on CAMILLE.
Deckhand/Stewardess Hailey Braham – After graduating from Temple University and teaching k-12 Art at an alternative school, servicing both at-risk youth and Special Education students for 6 years, I found myself ready for a major life change. My love for adventure, camaraderie, and the outdoors was always fulfilled during my summers as a counselor and Lake Director at an elite sleep-away camp, so I sought out on a mission to find that same kind of happiness on the water all year round. As a self-proclaimed dessert connoisseur, plant lady, and animal lover from a small town in Pennsylvania, entering the yachting industry has truly elevated my life in many new and exciting ways. I look forward to sharing that excitement with guests through interior and exterior service as our vessel deck/stew!
Chef Mimmi Fitzgerald – As Chef onboard CAMILLE, Mimmi offers a variety of culinary styles including vegan/vegetarian, farm-to-table, Keto/Paleo, and Thai/Asian Fusion. Her main passion however is a Superfood-Centric cooking philosophy, the study of the science and health benefits of clean food choices with a focus on anti-inflammatory nutritive parameters. Mimmi has worked as solo stewardess, cook/stew, and chef on high-profile yacht programs and charters and has been in high level guest services, hospitality, and planning for over 15 years. She expanded her entrepreneurial interest by creating Bohemian Pantry, which supplies superfood desserts to the yachting industry. She loves utilizing her vast skill set and instinct while producing the best culinary experience for CAMILLE’s guests.
